Apolipoprotein E (ApoE) is a protein involved in cholesterol transport and metabolism. The three common variants — E2, E3, and E4 — influence how your body processes dietary fat and cholesterol. The E4 variant is associated with higher LDL cholesterol, increased cardiovascular risk, and a stronger response to dietary saturated fat. The E2 variant is associated with lower LDL but can increase triglycerides.
